Here’s an admittedly boring, but very tasty first recipe. We ate this right away because we were hungry, but it tasted about 30% better after 24 hrs. in the fridge. I threw the balsamic in there to help with preservation, you could try cider vinegar as well.

Blend everything in a food processor, reserving 1/3 of the cheese crumbles, which you add in afterwards to give the dressing a little ‘chunk’.

1 cup sour cream
1 cup mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1-2 tsp. fresh ground horseradish (not ‘prepared’!)
2 large garlic cloves
1 tsp. honey
½ tsp. balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
fist-sized chunk of blue cheese, crumbled (I used Point Reyes Blue, a mild version)
